Shaped somewhere between a jack-o’-lantern and a snare drum, kabocha are even sweeter than the popular butternut, with a fluffy, vibrantly orange and almost fiberless flesh. Their green skins are patterned a bit like a tabby cat, combining light stripes and spots on a darker background.

Kabocha offers plentiful fiber, along with vitamins A and C, beta-carotene and iron. It’s lower in calories and carbs than butternut: 40 calories and 9g carbs for one cup of raw kabocha compared to 60 calories and 16g carbs for the same amount of raw butternut.
