Butternut squash – one ingredient five ways

In addition to having a sweet and slightly nutty flavor, butternut squash is one of the easiest winter gourds to crack into thanks to a thin rind that can be removed with a vegetable peeler. Add to it a healthy dose of fiber and vitamins A and C, and you have a fall vegetable superstar that’s also versatile — there’s no shortage of tasty ways to use the vivid orange flesh, from appetizers to dessert.
Inaba farm locally grows our organic butternut squash in Wapato, Wash. Each pound equals approximately two cups of peeled, chopped squash.
