Copper River salmon

This fall for a limited time only, Copper River salmon will be available, previously frozen. This rich, succulent fish typically is around for a short period of time in June, but our seafood merchandisers procured enough so we can enjoy it for a second time this year. What’s so special about Copper River salmon? It’s the high oil content, stored up from the salmon’s long journey along the nearly 300-mile Copper River. That extra oil makes the fish among the tastiest in the world, tender and moist whether roasted or grilled. Plus it’s low in calories and saturated fat yet high in protein and omega-3 essential fatty acids, which contribute to healthy heart and brain function. Visit our website for great salmon recipes and get cooking.

Coffee for a cause

Seattle coffee roaster Caffé Vita has partnered with several local organizations to create delicious coffee blends for healthy causes.

The 12,000 Rain Gardens Blend features coffees from Ethiopia, Guatemala and East Timor with notes of dark cherry, cocoa and honey. Ten percent of the purchase price of each 12-ounce bag is donated to Stewardship Partners and Washington State University’s 12,000 Rain Gardens campaign to install 12,000 rain gardens in the Puget Sound area by 2016.

Zoo Special Reserve is made from Rainforest Alliance-certified beans grown by Guatemalan farmers who promote biodiversity by keeping 40 percent of their land as a nature reserve to protect the habitats of native tropical animals and birds. The coffee has a smooth, sweet flavor with aromas of cocoa and hazelnuts. For every 12-ounce bag sold, $1 is donated to the Woodland Park Zoo and their conservation programs.

Welcome fall flavors in the PCC Deli by picking up a pint of one of our favorite autumn salads:

Roasted Yams and Kale are rich and savory, especially when paired with caramelized onions, tossed in a roasted garlic dressing and accented with thyme.

Walnut Beet Salad showcases red beets in a balsamic-walnut dressing that are then garnished with toasted walnuts.

Pumpkin Ravioli Salad features pillowy ravioli stuffed with cheese and pumpkin, served on a bed of fresh kale, tossed with Gorgonzola, Parmesan and walnuts for a bold, delicious flavor.
