- Yields: about 5 popsicles

Ingredients
- 2 1/2 pounds cucumbers - peeled, seeded and chopped
- 1 tablespoon sugar
- 1/4 cup fresh lime juice
- 1/2 teaspoon chile powder
- 1/2 teaspoon sea salt
- 3 tablespoons vermouth (optional)
Directions
Pulse all but 1/2 cup of the cucumber until smooth in a food processor. Strain into a bowl. You should have about 2 cups juice. Add remaining ingredients and stir to blend the mixture. Pour the mixture into popsicle molds, insert popsicle sticks, and freeze until solid.

POPSICLE MOLDS
Pick up colorful silicone molds at PCC, or make popsicles using items in your kitchen:

Fill shot glasses or other small glasses with your popsicle mixture, then cover the top of each glass with wax paper secured with a rubber band. Slit the wax paper in the center to insert a popsicle stick. Place the pops in the freezer and freeze until solid.

Wooden popsicle sticks are available at most stores that sell housewares, but spoons or chopsticks work well, too.
POPSICLES WITH ALCOHOL
Alcohol freezes at a much lower temperature than water, so the key to making popsicles with alcohol is to use a relatively small amount of alcohol mixed with other ingredients.
