Ingredients
- 1 large avocado
- 2 small eggs
- Salt and pepper, to taste
- Optional toppings:
- 2 tablespoons salsa
- 1 tablespoon diced, cooked bacon
- 1 tablespoon sliced green onions
- 2 tablespoons grated cheddar cheese
Directions
Preheat oven to 425° F. Line a baking sheet with parchment paper.
Cut avocado in half and remove the pit (but leave the skin on). Using a spoon, scoop out a little bit of avocado from the center of each half to make room for the eggs. Place the halves on the prepared baking sheet.
Crack an egg into each avocado half; season with salt and pepper.
Bake until whites are set and yolks are to your liking, 10 to 15 minutes. Top with your choice of salsa, bacon, green onions or cheese. If you would like your cheese melted, sprinkle it over the top of the cooked eggs and place under the broiler for 1 to 2 minutes.
