Ingredients
- 2 pounds new potatoes, quartered
- 4 small shallots, peeled and quartered
- 1 lemon, thinly sliced
- 8 cloves garlic, peeled
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 tablespoon chopped fresh oregano
Directions
Preheat oven to 450° F. Place a rimmed baking sheet in the oven for 4 minutes to heat.
Toss potatoes, shallots, lemon slices, garlic cloves, oil, salt and pepper in a bowl. Very carefully spread potato mixture on the hot baking sheet. Roast until tender and golden, 25 to 35 minutes, shaking the pan once or twice to turn potatoes. Sprinkle with oregano before serving.
