Ingredients
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 1/2 cups diced zucchini
- 2 tablespoons minced shallots
- 2 cloves garlic, minced
- 4 ears sweet corn, kernels removed
- Salt and pepper, to taste
- Pinch of cayenne pepper
- 1/4 cup chopped fresh basil
Directions
Melt butter and oil in a large saucepan over medium-high heat. Add zucchini, shallots and garlic and cook for about 5 minutes. Stir in corn and sauté for an additional 3 to 5 minutes. Season with salt, pepper and cayenne. Remove from the heat and stir in basil. Serve immediately.
