Ingredients
- 1 3/4 cups buttermilk
- 2 eggs
- 5 tablespoons melted butter
- 2 tablespoons minced chives
- 1 1/2 cups white spelt flour
- 1 cup cornmeal
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 teaspoons cumin
- 1 teaspoon coriander
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- Pinch of cayenne pepper (optional)
Directions
Whisk together buttermilk, eggs, butter and chives in a bowl. In a separate bowl, blend together flour, cornmeal, sugar, baking powder and soda, salt, pepper, cumin, coriander, oregano, paprika and cayenne. Stir wet ingredients into dry and let batter sit for 10 minutes while heating a waffle iron.
Drop batter by 1/3-cupfuls onto the hot waffle iron and cook until golden and crisp, according to waffle iron directions. Serve immediately or keep warm in a single layer in a 200° F oven until ready to eat.
