Description

In this hands-on class, you’ll start by watching Chef Nico expertly break down a whole chicken, teaching you key butchery skills you can use at home. Then, you’ll work together to create a delicious menu that makes the most of every part of the bird. You’ll learn essential techniques like roasting, searing, and making flavorful sauces, turning simple ingredients into satisfying dishes. From bone broth to classic Chicken Milanese to Wine Braised Chicken Thighs, you'll leave class inspired to make the most of your whole bird.

About the instructor: Pastry chef Nico Caballero has cooked and baked his way through 5 states and 4 countries, include staging at a bakery in France. He graduated with a BA in Music Composition from Lewis and Clark College in Portland, and while he still loves to make music, food is a deep passion for him. He believes a large part of cooking is sharing the cultural experience of food with those around you, and making it an interactive experience is the best way to learn and have fun!
