Ingredients
- 3 cups barley flour
- 2 cups buckwheat flour
- 1 cup blue corn flour
- 2 tablespoons brown or turbinado sugar
- 3 tablespoons baking powder
- 1/2 teaspoon baking soda
Directions
In a large bowl, whisk together all of the ingredients. Pour the mix into a jar or other pretty, air-tight container.

For pancakes, whisk together 2 cups of dry mix with 1 whole egg, 1 tablespoon oil and 1 3/4 cups milk (or milk alternative). Preheat griddle to medium while you let the batter sit at room temperature for 5 minutes. Thin with a little more milk, if desired. Pour 1/4 cup batter on the hot griddle. Turn when bubbles appear and pop.
