Ingredients
- 2 pounds red potatoes, scrubbed and quartered
- 6 tablespoons mayonnaise
- 2 tablespoons buttermilk
- 1 teaspoon red wine vinegar
- 1/2 teaspoon minced garlic
- Dash of Worcestershire sauce
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon dried dill
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup crumbled Gorgonzola cheese, divided
- 1/2 cup thinly sliced red onions
- 4 slices cooked bacon, diced
- 4 green onions, thinly sliced
Directions
Steam potatoes until tender, about 15 minutes. Cool and set aside.
In a food processor or blender, combine mayonnaise, buttermilk, vinegar, garlic, Worcestershire, parsley, dill, thyme, salt, pepper and 1/4 cup cheese.
In a large bowl, combine potatoes, dressing, red onions, bacon, green onions and remaining cheese. Smash potatoes slightly to work in dressing.
