Ingredients
- 1 1/2 cups whole wheat spelt flour
- 1/2 cup chopped dates
- 1/4 cup chopped walnuts
- 2 teaspoons ground ginger
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/8 teaspoon ground cloves
- 1 cup cooked pumpkin
- 1/2 cup unsalted butter, melted
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 1/4 cup buttermilk
- 2 eggs, beaten
- 1 teaspoon vanilla extract
Directions
Preheat oven to 350° F. Grease and flour a 9- by 5-inch loaf pan.
Stir together flour, dates, walnuts, ginger, cinnamon, baking soda, salt and cloves in a bowl. In a separate bowl, mix together pumpkin, butter, sugars, buttermilk, eggs and vanilla.
Add dry mixture to wet, stirring until just combined. Pour into the prepared loaf pan and bake until a toothpick inserted into the center of the loaf comes out clean, about 40 minutes.
