Ingredients
- 4 green bananas
- 3 tablespoons olive oil
- 1 small onion, thinly sliced
- 1 jalapeño pepper, thinly sliced (remove seeds for less heat)
- 2 cloves garlic, minced
- 1 tablespoon apple cider vinegar
- Salt and pepper, to taste
- 2 tablespoons chopped fresh cilantro
Directions
Peel bananas and boil in salted water for 5 minutes. Drain and cool to room temperature. Cut bananas into 1/2-inch-thick diagonal slices.
Heat oil in a large sauté pan over medium heat. Add onions and cook until soft, about 5 minutes. Stir in jalapeño and garlic and cook until fragrant, about 2 minutes. Add banana slices, vinegar, salt and pepper. Cook, stirring often, until bananas are heated through, 3 to 5 minutes. Serve immediately garnished with cilantro.
