Bulk spotlight: alternative flours

Whether you are going gluten free, reducing wheat in your diet, or simply wanting to try something new, venture beyond wheat this month and try a “just right” amount of three outstanding flours. You’ll find almond flour, brown rice flour and spelt flour in our bulk department. So go ahead, save money and reduce packaging while experimenting in the kitchen to your heart’s content.
Spelt flour
Even though it contains gluten, some people with wheat or gluten sensitivities can tolerate spelt, a distant cousin of wheat. We carry two different spelt flour varieties in bulk: whole spelt (equivalent to whole wheat) and refined white spelt (similar to white flour). Spelt produces wonderfully dense, richly hued bread and is equally delicious in desserts. For spelt bread, start with a little less water than you’d use with wheat flours. To avoid it becoming too crumbly, don’t over-mix or over-knead the dough. Make a batch of Lemon Coconut Chews.
Brown rice flour
Rice flour works well as a thickening agent and will produce a slightly nuttier, darker bread than wheat flour. It’s an indispensible component of a gluten-free baking mix, especially if you have nut allergies. It’s often combined with whole grain flours of varied “weights,” as well as a starch and binder to create a satisfying mix. Whip up an All-Purpose Gluten Free Baking Mix.
Almond flour
You won’t often encounter almond flour sold in bulk but you’ll find it in PCC’s bulk bins. This delicious gluten-free flour/meal works especially well in baked goods such as muffins, cookies, cakes and pancakes, adding both moisture and a good mouth feel.
