One of the most popular vegetables in the Mediterranean, chard also is one of the most nutritious vegetables in the world. Its dark green leaves and vibrant-colored stalks are packed with vitamins K, A and C and contain beneficial antioxidants. Extremely versatile, chard can be incorporated into a variety of dishes, whether you’re cooking breakfast, lunch or dinner.
Frittata
Chard is a nice match for eggs, especially when combined with a sharp cheese, such as fontina or pecorino. Also consider adding additional veggies, such as onions, diced potatoes or red peppers. Try our recipe for Seasonal Frittata, subbing in one bunch of chard, chopped, for the mushrooms.
Quesadilla
In a hurry? Quesadillas come together in a matter of minutes and the addition of chard adds nutrition plus delicious flavor. Add a little cooked bacon and some pepper jack cheese and your quesadilla will taste downright gourmet. Try our recipe for Bacon Chard Quesadillas.
Lasagna
The earthy flavor of chard is a nice balance to rich, creamy béchamel sauce. Add sausage and you have a lasagna that’s worth sharing with your favorite people, whether you’re hosting a dinner or attending a potluck. Try our recipe for Swiss Chard and Sausage Lasagna.
Soup
Winter greens, including chard, are a wonderful addition to hearty soups, where they combine well with beans, pasta or rice. Warm up with a bowl of our Classic White Beans and Greens Soup. Make a pot at the beginning of the week and enjoy leftovers for lunch.
Salad
Salads don’t have to end with summer. Take advantage of fresh chard by slicing a bunch into ribbons and tossing them with walnuts and raisins to make a fantastic winter dish. Try our recipe for Rainbow Chard Salad.
