Overnight oatmeal

Sure, “refrigerator oatmeal” doesn’t have the tastiest ring to it but we promise this no-cook, no-fuss breakfast is the perfect meal for summertime, when the days are long and fresh fruit is abundant.

Packed with fiber and protein, it offers hearty nutrition and it only takes minutes to prep. Throw it in the fridge and when you wake up you have a satisfying dish that can be taken on the go. Plus, it can be customized to suit your tastes.

Start with our basic recipe and then add or alter to your liking. Not a fan of cow’s milk? Use coconut milk. Substitute strawberries for stone fruit as summer progresses. Drizzle in maple syrup or honey. Add your favorite nut butter. The possibilities are endless!

 

Basic Overnight Oatmeal

  • 1/3 cup rolled oats
  • 1/3 cup plain yogurt
  • 1/3 cup milk
  • 1 tablespoon chia seeds (optional)

Mix the ingredients together in an 8-ounce mason jar or bowl. Place in the refrigerator overnight. In the morning, top with fresh fruit, nuts or whatever you see fit. (You may add mix-ins the night before, but keep in mind whatever you incorporate will be soggy by morning.)
